Materials:
• Wheat flour - 300 grams
• Paneer - 200 grams
• Green chili - 2 (finely chopped)
• Ginger - 1 inch long piece (grated pumpkin)
• Green coriander - one tablespoon (finely chopped)
• Coriander powder - 1 tsp
• Red chili powder - less than a quarter teaspoon
• Salt - as per taste
• Oil or Ghee
Process:
• Sieve the flour and take it out in a vessel. Put half a teaspoon of salt, and 2 teaspoons of oil in the flour. Knead a soft dough with the help of lukewarm water.
• Grate the paneer. Mix green chili, ginger, green coriander, coriander powder, red chili powder and salt. This paneer pithi is ready to be filled in parathas.
• Keep the tawa on the gas and heat it. Break a little dough from the dough, (equal to one lemon) make round balls. Put the dough in dry flour (prothan) and roll it into a round about 3 inches in diameter.
• Take out 2 small spoons of paneer from the pit and place it on the rolled paratha. Lifting the paratha from all sides, close the paneer pith. Take this paneer filled ball with the help of palm and fingers, it is called making chakloi. Roll out the chakloi into a 6-7 inch diameter with the help of a roll. Put the rolled parantha on the hot tawa. Apply ghee on both the sides and roast it till it turns brown. Lift the parantha from the pan and place it on a plate with kitchen napkin paper. Prepare all the parathas in the same way.
• Serve and eat with hot paneer parathas, aloo matar sabzi, raita, chutney and any vegetable of your choice.
